A Sprinkle of Fall, a Pinch of Autumn

October 2nd

Pumpkin scone

I made four batches of pumpkin scones this weekend. Claudia’s recipe is fantastic! I added a bit of nutmeg and cinnamon to the dough. The spices filled my home with a sweet earthy aroma that forced me to pour a giant glass of milk and pace until they came out of the oven.

I’m usually pretty good about resisting the desire to binge on sweets I’ve baked, but I inhaled three of these while they were still warm. I quickly packaged the others and gave them away to family and friends during the weekend.

I also tried a new recipe — pineapple upside down cupcakes. Alma said pineapple upside down cake is her favorite and I owed her a thank you gift. I thought the cupcake size would be more convenient. I lined each cup with a scoop of brown sugar and a pineapple ring before filling them with pineapple batter.

The golden brown results smelled heavenly.

The trick to making these moist is adding a package of instant pudding to the mix. I used french vanilla. They bounced back to the touch after 20 minutes in the oven.

At this pace, I’m going to be an orange hue and 300 pounds by Thanksgiving!

I must try both of these. Do you think I’ll be able to wait until Thanksgiving when I’ll be forced to share? Don’t bet on it.

  2. Holy Pumpkin – batman!! YUM!! I can only imagine what Thanksgiving dinner with you must be like.

  3. You are a domestic godess! Jealous 🙂 Can you please tell dummy me what 200 degrees Celsius translates to for an American baker? LOL

  4. These upside down cupcakes are awesome! Way cute interpretation on the original. Those scones don’t look too shabby either. Looks like you and I both had baking weekends — I love it. Ooh, and it started raining outside when I pulled the pies from the oven. I think it’s officially fall!

  5. ummm, delicious! I love those little pineapple cakes, never mind we’re going into spring, I will definitely have to try those.

  6. Love the cupcake idea!!! How are you with pies??? Check out this idea…I fly you up here to Pennsylvania, & you can be the guest “homeroom mama” for the day. On that day, you teach 4 & 5 year olds how to make and bake pumpkin pies!! Sounds good eh??

I’m really trying to be a better baker…really I am Kelli. It’s my oven. It hates me!!!!

  11. I´m sooo glad you like the scones! I must try those pineapple upsidedown cakes РI think I´ll use apples though, we have buckets full of them on our trees in the garden.

  12. Yum!!! Those pumpkin scones sounded so good, I wrote down the recipe and went into the kitchen and made a batch… except with squash, not pumpkin, because that’s what I happened to have. 🙂 It’s very, very tasty! Except that I left out the cinnamon and nutmeg and I’m really kicking myself about that. But they’re still extremely good. I just finished my second one.

Now maybe I’ll have to try those pineapple upside down cupcakes……. hmmm…..

thank you for the great idea, I love celebrating fall with pumpkins and squash and baking.
