Falling for Autumn

September 26th

It is beginning to look quite a bit like autumn around my house. I tried a new Malbec last night, bought myself a handful of gorgeous orange sunflowers and cooked up a Fall feast.

butternut squash lasagna

Main course: roasted butternut squash lasagna. I’ve made this before, but this time I added a couple grilled chicken breasts and a layer of zucchini. {Yep, I’m eating meat again. And you know what? All of a sudden, I am not nearly as hungry. Protein is a good thing.}

stuffed with pumpkin, butter, spice

This was one of the best lasagnas I’ve made. We also had spinach salad and pumpkin empanadas for dessert. I used this recipe for the pastry and it came out light and just right.

baking away

I filled them with pumpkin puree, a dash of all spice, a dash of cinnamon and a pat of butter. Served with vanilla ice cream, they were a hit.

I’ve been sewing and knitting a bunch this week too. Alas, my sewing machine was recently in for repair and they have incorrectly adjusted the presser foot so it jumps and hits the plate. It only took me a dozen (no joke) broken needles to figure out what the problem is. Back to the shop it goes today.

I am so in love with autumn and the cooling weather, I am tempted to create an all pumpkin week. Eating squash, wearing sleeves and socks and coming up with great pumpkin carving ideas… The next six months of Arizona weather is the reward for having emerged in tact from the oven that is our 6-month fiery summer. Three cheers for survival!

  1. Oh Kelli, your food pics always make me drool!
I wish we’d get a taste of autumn down here, I can’t wait!!

  2. Mmm… that all looks so good! My sewing machine is in the shop as well, and used my old Singer last night, and it’s just not the same. Oh Janome, I miss you!

  3. wow! it all looks so perfect for fall, and also very healthy too. what a great combo! πŸ™‚

  4. The pumpkin empanadas sound fabulous! I’d like 3 orders please!!!

  5. Mmmmmm… pumpkin empenadas?!?!!??! Oh, I must try that!!
    Love the fall!!

  6. Those pumpkin empanadas look heavenly! I agree with one of the above posters.. your food always look great and delicious.

  7. The pictures look really good. You don’t need to invite me to an all squash/pumpkin feast, though. Not my favorite things. Though the way you prepare them, I might be able to handle them! Heck, there are very few things I absolutely will not eat. Some I will pass up on the buffet table, though!

  8. I am sooo jealous of your fall weather…It’s still in the 90’s here in Georgia..I wore a long sleeve shirt today anyway just because I’m so ready for fall and cool weather…

  9. It looks scrumptious, Kelli. I must try making this soon. I hope your sewing machine is soon repaired and back in action.

Your all-pumpkin week sounds like a lot of fun.

I’m with you on looking forward to cooler weather or a semblance thereof here in Tucson. The heat in conjunction with experiencing my own little tropical vacations (meaning hot flashes) is pretty challenging.

  10. Your lasagna looks great! And those empanadas…drooooooooooooool.

Congrats on making it through another HAAAAAAAT summer. I am wishing for a nice cool (ie. below 75 degrees) fall for you out there.

If only the temp would drop below 90 here. What IS the deal with that? So lame. Come on NorCal.

  11. In order to make all the other commenters jealous…i just finished the leftovers you gave me for lunch and whaddya know, just as good the 2nd time around! I think it’s time for a nap on the company futon now…

  12. That looks yummy, thanks for sharing. I’ll have to try those recipes.

  13. OMG! I want an empanada!!! They look so good. I’m thinking instead of pumpkin I can do sweet potato pie filling! Yummy!

  14. Oooh – fall is my favorite too. I love getting into the baking/decorating/pumpkiny/craftiness of it all. I want one of those pumpkin thingys right now! (seriously, can you send one through email?!?)

  15. damn you! now I’m hungry again. That lasagna looks amazing. I just made Pumpkin bread from Martha’s baking book and it was amazing! (I used nonfat yogurt instead of the buttermilk). I love fall!

  16. Ohhh it all looks so yummy. I’m gonna have to try that lasagna. And I think this week I’m gonna have to make last year’s pumpkin scone recipe as well!

  17. Pumpkin empanadas? Never had them, but they look and sound delicious. Why is there no smellavision? Might just have to try making some myself.

Today I made cinnamon and cardamon rolls. My first of the autumn baking.

  18. Comfort food…
    Looks soooooo tasty…
Can you see me drooling? πŸ˜‰
Must be the time of year for lasagna, my friend just called me and has a yummy piece for my lunch tomorrow… my friends frequently feed me… I’m soooo lucky… πŸ™‚

  19. Oh YUM!!! Can you overnight me some of those empanadas?? Seriously – they look delicious!!!!

  20. Yum! Do you cater?! πŸ˜‰ I’m glad you’re knitting and sewing more. Being crafty is fun and a good de-stresser. I’m so excited for fall. The leaves are already so beautiful here so far.

  21. I like very much autumn too! I’m about to post on the same subject in my blog. Nice lasagna btw, it seems so very good, slurp!

  22. Yummy! you are what us portuguese call “Fada do Lar” (the home fairy… hahahahah

  23. Okay, that is going on the menu for next week! Yum!

  24. I can’t believe we’re already back to pumpkin season. Not that I’m complaining, mind you! I heart fall like you do, and made some cookies today to celebrate. I bought some chopped pumpkin chunks at the grocery store and stealthily slipped them in the refrigerator… when Ale, my resident chef, didn’t take the hint, I pre-ordered this morning at breakfast: “Can you puhlleeeese make me your pumpkin soup tonight? Thankkkkkyouuuuu!!!”

  25. Do you have to make such yummy looking food??? I bet it all tastes as good as it looks too.

So many great recipes out in blogland now. Think I’d better get myself into the kitchen and make something. πŸ™‚

  26. Ooooo, I just noticed pumpkins at the market this morning for the first time. Fall is my favorite season. I’m going to steal these recipes. That green chicken chili you made once was the bomb.

I could have sworn you were talking about the heat no more than a week ago. But it’s still weirdly hot up in the Bay Area, and in Chicago, too. 90 degrees hot. It’s weirdly disjunctive to have these summer-hot days that already seem winter-short.

  27. Gurggle! That is my stomach begging! And, is that Finny of the -I-cant-face-fall-must-wear-flip-flops-up there complaining that it is still too hot? Too summery? LOL

  28. OH, YUM!!! Who could resist that dinner?

  29. Love the thought of Pumkin desserts – I might just try these on teenagers – a true test of a delicious dessert.

  30. Oh my, does all that food look DELICIOUS!!!!!!!!!!! Yummo, as Rachael Ray would say (and it irritates me so I haven’t a clue why I used that word)!!
    XOXOX

  31. mmmm…all looks yummy! i have an empanada recipe i’m saving for later this fall. uses yucca in the dough, plantain in the filling (oye, not local).

the return to chicken! good for training…
