Falling for Autumn

It is beginning to look quite a bit like autumn around my house. I tried a new Malbec last night, bought myself a handful of gorgeous orange sunflowers and cooked up a Fall feast.

Main course: roasted butternut squash lasagna. I’ve made this before, but this time I added a couple grilled chicken breasts and a layer of zucchini. {Yep, I’m eating meat again. And you know what? All of a sudden, I am not nearly as hungry. Protein is a good thing.}

This was one of the best lasagnas I’ve made. We also had spinach salad and pumpkin empanadas for dessert. I used this recipe for the pastry and it came out light and just right.

I filled them with pumpkin puree, a dash of all spice, a dash of cinnamon and a pat of butter. Served with vanilla ice cream, they were a hit.

I’ve been sewing and knitting a bunch this week too. Alas, my sewing machine was recently in for repair and they have incorrectly adjusted the presser foot so it jumps and hits the plate. It only took me a dozen (no joke) broken needles to figure out what the problem is. Back to the shop it goes today.

I am so in love with autumn and the cooling weather, I am tempted to create an all pumpkin week. Eating squash, wearing sleeves and socks and coming up with great pumpkin carving ideas… The next six months of Arizona weather is the reward for having emerged in tact from the oven that is our 6-month fiery summer. Three cheers for survival!

  7. The pictures look really good. You don’t need to invite me to an all squash/pumpkin feast, though. Not my favorite things. Though the way you prepare them, I might be able to handle them! Heck, there are very few things I absolutely will not eat. Some I will pass up on the buffet table, though!

    Your all-pumpkin week sounds like a lot of fun.

    I’m with you on looking forward to cooler weather or a semblance thereof here in Tucson. The heat in conjunction with experiencing my own little tropical vacations (meaning hot flashes) is pretty challenging.

  14. Oooh – fall is my favorite too. I love getting into the baking/decorating/pumpkiny/craftiness of it all. I want one of those pumpkin thingys right now! (seriously, can you send one through email?!?)

  15. damn you! now I’m hungry again. That lasagna looks amazing. I just made Pumpkin bread from Martha’s baking book and it was amazing! (I used nonfat yogurt instead of the buttermilk). I love fall!

  17. Pumpkin empanadas? Never had them, but they look and sound delicious. Why is there no smellavision? Might just have to try making some myself.

  24. I can’t believe we’re already back to pumpkin season. Not that I’m complaining, mind you! I heart fall like you do, and made some cookies today to celebrate. I bought some chopped pumpkin chunks at the grocery store and stealthily slipped them in the refrigerator… when Ale, my resident chef, didn’t take the hint, I pre-ordered this morning at breakfast: “Can you puhlleeeese make me your pumpkin soup tonight? Thankkkkkyouuuuu!!!”

  26. Ooooo, I just noticed pumpkins at the market this morning for the first time. Fall is my favorite season. I’m going to steal these recipes. That green chicken chili you made once was the bomb.

    I could have sworn you were talking about the heat no more than a week ago. But it’s still weirdly hot up in the Bay Area, and in Chicago, too. 90 degrees hot. It’s weirdly disjunctive to have these summer-hot days that already seem winter-short.
