Halibut with grapefruit and fennel salsa. {Who knew halibut was so expensive?} Brown rice, steamed orange cauliflower and white wine. Alma’s bringing low-fat strawberry shortcake for dessert. Community dinner, round dos.

    By the way, I think this whole community dinner idea is so great. One of our resolutions this year is to entertain more often (which is to say: at all.) You’re quite the inspiration.

  3. I mut agree with Meg as that was/is one of our resolutions as well and we have yet to do anything about it but you are an inspiration.

    Halibut is very expensive but it holds up so well when cooked.

  4. I love fish. Salted cod fish is my favorite, but hard to find around here. I like halibut too and tuna!!!

  5. Since becoming a vegetarian nearly fifteen years ago, I haven’t given a second thought to fried chicken, steak, hamburgers, or even bacon. The only two things I missed? Corn dogs (fortunately, there are now very tasty veg varieties! hooray!) and seafood. Especially beer-battered halibut dipped in ranch dressing (which I discovered when visiting my brother in Alaska).

    *insert Homer Simsonesque drool* Ahhhhhhhhhh.

    I keep hoping that someone (SOMEONE! ANYONE!) will create a vegeterian “faux” halibut one day…

  6. Gah, I miss fish. Oy. That sounds sooo good. I love fennel. I just used it in a Hummus Quinoa casserole the other night…too die for.

  10. sooo,i am lazier than you and i make a lazy woman’s version of this. it is fennel, canned tuna, and cucumber. chop, open, mix. add some fancy truffle oil. yum.

  11. I’ve made this before after seeing Giada make it.
    It got meh reviews.

    Our family and friends do not enjoy healthy very much.
